I managed to create the VMDK using:

/Applications/VMware\ Fusion.app/Contents/Library/vmware-rawdiskCreator create /dev/disk4 fullDevice ./rawDisk4 lsilogic

and it correctly fills out UUID :)

However i still needed to patch the vmx as you described, since VMWare won’t let me select my VMDK..
